Have I mentioned I LOVE learning?  I am seriously like a 6 year old on Christmas Eve when I sign up for a new class. Who knew at 46 I would have found such a passion for baking and baking CLASSES.  Well folks, this Apple Pie Class at the Pacific Pie did not disappoint.

Immediately I knew I was in for a plethora of tips & tricks when I was welcomed with a sizable packet of recipes, my own station in the main kitchen, and the hustle & bustle of staff members moving around me like a well oiled machine.  

Yup, I 100% felt I was on the path to becoming a Master Pie Maker! Did I mention I dream big?!?

So these classes are offered roughly once a month and are lead by owner, Sarah.  Sarah has such an easy going way about her.  The kind of gal you would love to sit and have a glass of wine with and talk for hours.  Well in my 4-hour class she gave us a glimpse into the opening of Pacific Pie.  My understanding is her Australian husband moved to Portland and missed the famous Meat Pies from his home town in Australia.  Sarah wanted to ready a solution and picked up learning & perfecting his meat pie favorites.  In no time, she mastered these pies so well that she opened her first of two brick and mortar pie shops!

A jam packed class1Our class entailed but was not limited to (1) learning to roll a top/bottom crusted apple pie (2) a lattice apple pie technique (3) making scrumptious apple pie filling (4) and a fantastic way to look at a base recipe, make slight variations to create your own flavorful concoctions!   I must have looked like such a brown noser because I was scribbling so many notes throughout the whole class.  But I couldn't help it, there were so many tips were flying around and I just wanted to remember them all!

Don't mind if I do, a cup of coffee while we wait!  Apple pies take a bit of time to bake.

The class was an intimate group of 6 and we all went home with our own hot apple pie!  To encourage her students to get right back into pie making, Sarah sent each of us with 2 extra pie dough rounds.  So cool!  Another bonus was a slice of chocolate yumminess (see below picture) and the recipe!  Yes please & thank you.
